Easy Spinach Casserole

1 pkg frozen chopped spinach

1 pt sour cream

1 envelope dry onion soup mix

 

Cook and drain spinach. Combine with sour cream and soup mix. Pour into casserole dish. Cover and bake at 350° for 30-40 minutes. Serves 6.

Cranberry Beets

1 can (1 lb) diced beets

1 can (1 lb) whole jellied cranberry sauce

2 Tbsp orange juice

1 tsp grated orange rind

salt to taste

 

Combine all ingredients and heat. Cool to serve.

Mashed Potatoes (Party Style)

8 medium potatoes, peeled, cooked and mashed

2 cups grated cheddar cheese

6 green onions, chopped

3 tsp salt

2 cups sour cream (or 1 cup sour cream and 6 oz cream cheese)

Mix potatoes, onions, salt and sour cream together. Place in baking dish and bake at 350° for about 30 minutes. Top with grated cheese and heat until melted.
